Rainbow Cake
I wanted to make Daughter a cake with a twist for her 9th Birthday and so I decided that I would make her a rainbow cake.
I started with an ordinary 8oz (235g) cake mix as follows:
8oz (235g) Butter
8oz (235g) Caster Sugar
8oz (235g) Self Raising Flour
4 eggs
1 teaspoon of vanilla extract
I made the cake mix using the creaming method.
Cream the butter & caster sugar until pale and light in texture
Beat the eggs together lightly with the vanilla extract
Add the 4 beaten egg gradually adding a tablespoon of the flour each time to prevent curdling
Sift the four into the cake mix and mix until all combined
When the cake mix is fully mixed separate the mix into 6 equal portions in separate mixing bowls – I know there are 7 colours in a rainbow but I only had 6 rainbow colours; if you have all 7 colours separate your mix into 7 bowls.
Colour each pot of cake mix a different colour using colouring gels rather than food colouring. I noticed recently that my local Asda now stock colouring gels.
Here are the coloured cake mixes:
Spoon the coloured cake mixes into a cake tin – I used a 20cm square tin.
Bake in the oven at 180 for 30 minutes uncovered & then for a further 10 minutes with a foil cover to prevent burning.
Remove the cake from the oven & ensure it is cooked through by inserting a skewer – the skewer will come out clean if the cake is cooked.
Leave the cake to cool in the tine for 10 minutes & then turn out onto a wire cooling rack and leave to cool completely.
The cake can then be decorated as you desire.
I trimmed the cake down to get rid of the browned edges.
I then made a letter “E”.
I decorated the cake using pink buttercream & star decorations.
The great thing about this cake is that it looks nothing special with buttercream on but when the cake is cut a magical surprise is revealed!

You have inspired me for madams birthday cake as its her first birthday party for her friends we want to make it extra special and i think this is the way!

Wow this is brilliant, I have never used colour gels before but will have to look out for them, love the idea of fairy cakes. May have to do that with Baba this week as we are stuck indoors need something fun to do xx

He will love mixing the gel colours into the cake mix! You could make smaller fairy cake size ones as that might be easier.
